SPECIAL BRANDY CHOCOLATE TRUFFLES

INGREDIENTS:

8 ounces semi-sweet chocolate chips
1/2 cup heavy cream
2 tablespoons of your favorite brandy
1/2 cup cocoa powder or icing sugar

Assembly:
Place the semi-sweet chocolate chips into a heat-proof bowl.
Pour the heavy cream into a saucepan and bring to a boil. Once the cream is boiling, take the saucepan off the fire and pour the cream into the bowl with the chocolate.
Fold the ingredients together until evenly mixed. Add the brandy and continue mixing it.
Take some plastic wrap and place it on top of the bowl and cover it. Then gently press down so that the plastic wrap is touching the mixture's surface. This prevents the chocolate from having a shiny top skin. Let the mixture settle and firm up for a few minutes.
Line a cookie sheet with wax or parchment paper.
Using a spoon or melon baller, scoop out the mixture and shape it into small balls.
Dip the balls into a plate filled with cocoa powder or icing sugar to coat it thoroughly.
Refrigerate the truffles until you are ready to serve them.

TIP: This recipe makes a dozen truffles. If you want to add a bit more crunch to this brandy truffle chocolate recipe, you can coat your truffles in desiccated coconut or chopped nuts instead. Brandy is very strong, and can contain up to 60% alcohol, so this recipe is perfect for hardcore alcohol on chocolate lovers.
