MAYAN TRUFFLES

INGREDIENTS:

10 oz at least 85% high-quality dark baking chocolate
1 tsp ground cinnamon
1 orange, zested
1 vanilla bean
1/4 tsp chipotle chili powder
1 dash sea salt
1 tablespoon coconut oil
1 cup full-fat coconut milk
Dutch-process cocoa powder, to taste

Assembly:
Finely chop baking chocolate and add to a large heat-resistant bowl.
Add orange zest, chipotle chili powder, cinnamon, sea salt and the contents of the vanilla bean. Toss to combine ingredients well.
Place coconut milk in a small heavy-bottomed saucepan on the stove over medium heat.
Add coconut oil and stir to combine.
Heat coconut milk and coconut oil together until just simmering.
Pour coconut milk mixture over chopped chocolate and spices in the bowl and let stand for 30 seconds.
Stir constantly in the same direction with a wooden spoon until completely melted, smooth, and thoroughly combined.
Place the mixture into a small glass baking dish lined with parchment paper and roll into a long shape as well as you can.
Chill, covered, in the refrigerator for at least 8 hours.
Remove from the refrigerator and slice into chunks. If desired, roll these chunks into ball shapes and chill for 10 minutes to set up again. If you prefer, you can leave these squares for a more rustic truffle.
Toss chunks with Dutch-process cocoa powder to coat thoroughly.
Serve at room temperature.
