CARAMEL COOKIE TRUFFLES

INGREDIENTS:

1 pouch salted caramel cookie mix, plus egg and butter as needed for cookie mix
14 oz white melting chocolate
4 oz softened cream cheese
3 tablespoon toffee pieces

Assembly:
Make cookies according to packaging directions, then let cool for about 15 minutes.
Process half of the cookies into a fine crumb in the food processor. Repeat the process until the entire batch has been turned into crumbs.
Return all cookie crumbs to the food processor and add the cream cheese.
Pulse on high until mixture can be easily formed into a ball.
Roll into 1-inch balls by hand and place on a lined baking sheet.
Chill, uncovered, in the refrigerator for 15 minutes.
In a large microwave-safe bowl, melt chocolate for 15 seconds at a time on high, stirring each time, until completely smooth.
Dip cookie balls one at a time in the chocolate mixture using a fork. Sprinkle over toffee bites.
Return to the lined baking sheet and chill in the refrigerator for 45 minutes.
Serve.
