BATTER FILLED TRUFFLES

INGREDIENTS:

1-3/4 cup all purpose flour
3/4 cup unsweetened dark chocolate cocoa powder
1 tsp salt
1/2 cup salted butter softened to room temperature
1-1/2 cup white sugar
3/4 cup milk
2 tsp pure vanilla extract
12 oz semi-sweet chocolate chips
1 tbsp unsalted butter, cold
Unsweetened shredded coconut for topping

Assembly:
Whisk together flour, cocoa powder, and salt in a large mixing bowl.
In a separate large mixing bowl, combine butter, sugar and vanilla. Beat well until it becomes light and fluffy using hand mixer or stand mixer.
Add dry ingredients to the wet mixture a little bit at a time. Alternate with adding milk a little bit at a time.
Be sure to mix well until the dry ingredients and milk have been combined with the wet ingredients. You are looking to create a very thick batter.
Roll batter into 1-inch balls by hand and place on a lined baking sheet.
Chill in the refrigerator for 30 min.
Place chocolate chips and 1 tablespoon cold butter in a large microwave-safe bowl and melt on high for 20 seconds at a time, stirring every time until completely smooth. Do not overheat the chocolate.
Dip balls in melted chocolate using two forks. Tap the balls on the edge of the bowl to remove the excess chocolate, then place them on the lined baking sheet.
Let stand at room temperature for 1 hour.
Serve.

This no-bake recipe is easy to put together and takes very little time to complete.
